Today it’s Waffle Day: eat a delicious, freshly baked waffle. It can, believe it or not, be healthy too. Together with Team Jumbo-Visma, the Bisschopsmolen in Maastricht developed the tastiest waffles for (top) athletes. And for anyone who appreciates a healthy snack.
250 grams of olive oil (for example, from Finca Duernas)
250 grams sugar
1 packet of vanilla-flavored sugar
1 pinch of salt
6 eggs or egg substitute
100 grams (vegetable) milk500 grams of Protein-rich Tritordeum Banquet Mix
• Beat the sugar, eggs, vanilla, and salt until it’s fluffy.
• Slowly add the olive oil.
• Mix the (vegetable) milk into the mixture.
• Carefully mix the Protein-rich Tritordeum Banquet Mix into the mass.
• Switch on the waffle iron.
• Lubricate the waffle iron lightly with olive oil for each new bake.
• Scoop batter from the bowl with a spoon and cover the waffle maker with the batter.
• Close the lid.
• Bake about 1-2 minutes on the medium setting.
• Delicious with fresh fruit or another topping

The Bisschopsmolen is no stranger to those who follow Team Jumbo-Visma. The Maastricht bakery has been the team’s Official Supplier since 2012. The collaboration between Bisschopsmolen and Team Jumbo-Visma stems from the shared belief that nutrition is the essential element for our body to perform well. “Team Jumbo-Visma constantly challenges us to develop new products based on pure ingredients, with proven nutritional values”, Frank van Eerd, owner of the Bisschopsmolen, said. “We are happy to take on that challenge.”

De Bisschopsmolen has always worked from the ground up. Since meeting Team Jumbo-Visma, the bakery has started to think even more about what food does to the body. Van Eerd: “We delved deeply into the matter and started looking at our products from a different perspective. We have gained a lot of knowledge through collaboration with nutritionists, dieticians and cyclists. What proteins help the body recover, what carbohydrates are suitable for a fast or long-term performance: thanks to our collaboration with cycling, we now know the answer to these kinds of questions.”
From top sport to care
These two passions - the baker’s trade and sport - complement each other beautifully. After all these years, the Bisschopsmolen knows exactly how food meets personal needs; the bakery is also increasingly being approached by hospitals to develop products for specific patient groups. After all, recovering from an illness is also top sport for your body. The cherry plates or muesli bars, for example, can help your body, just like the waffles that have been developed for Waffle Day.
