Food Friday – Our riders' favorite summer proof "stamppot"

The Dutch love to mash their food. Stamppot is one of those typical Dutch dishes associated with the winter, but there are quite some summer proof stamppot recipes as well! Discover why stamppot is such a perfect dish for cyclists, and get inspired by 3 summer proof stamppot recipes!

Stamppot is packed with energy. Reason enough to serve this Dutch dish to our riders. The main ingredients of stamppot typically consist out of mashed potatoes and vegetables, where it is important to not overcook the vegetables in order to maintain the healthy fibers and minerals. Vitamins, minerals and a stuffed stomach: that's what you want on a cold winter day, but also during the summer when the rides get longer as it is the perfect cycling weather.

Choose for lean meat and avoid the gravy

Do you like to eat stamppot, but are you rather a loyal fan than an active cyclist? Control the amount of calories in a stamppot with these easy, healthy tips:

  • Choose for lean bacon and cook it until most of the fat is out of the bacon. Drain the bacon afterwards to avoid that the fat will end up in your stamppot anyway.
  • Avoid or limit the gravy as this is contains a lot of calories without that many nutrition value. Herbs and/or mustard are perfect ingredients to add some extra flavor.

A stamppot gets a hint of summer if you choose for light ingredients. Skip the "rookworst" (smoked sausage) and/or replace the potatoes with sweet potatoes. Do you want to try a stamppot in the summer? Our riders love the 3 summer proof stamppot recipes below!

Recipe 1: Stamppot Italian style (endive with mashed potato and tomatoes)

Ingredients:

  • 1,5 kg potatoes
  • 1 can Unox Knaks (420 grams; sausages)
  • 300 grams cherry tomatoes
  • 500 grams endive
  • 2 spoons fresh oregano (chopped) or 1 spoon dried oregano
  • 2,5 spoons fresh basil (chopped)

Preparation:

  1. Peel and chop the potatoes. Cook for about 15 minutes.
  2. Pre-heat the ovengrill. Cut the Unox Knaks (sausages) obliquely and add them onto an oven tray.
  3. Add the tomatoes onto the oven tray, and grill for about 5 minutes.
  4. Drain the potatoes, but make sure to save the water as you will need it later on. Mash the potatoes and put it back onto the stove. Slowly add the endive, which will slink while you keep stirring.
  5. Add the oregano and the boiling water (bit by bit) until you have creamy stamppot.
  6. Serve the stamppot with the sausage, tomatoes and fresh basil on top.

Recipe 2: sweet potato stamppot (mashed sweet potato)

Ingredients:

  • 1 kg sweet potatoes
  • 75 grams arugula
  • 150 grams sundried tomatoes
  • 100 grams feta

Preparation:

  1. Peel and chop the sweet potatoes into pieces of about 3x4 cm.
  2. Clean the sweet potatoes and boil for about 10 minutes.
  3. Chop the arugula and sundried tomatoes.
  4. Drain the sweet potatoes and mash them. Add some flavor by adding salt and pepper to your liking.
  5. Add the arugula and sundried tomatoes, and stir.
  6. Serve the stamppot with crumbled feta on top.

Recipe 3: endive with mashed potatoes and pees

Ingredients:

  • 1,5 kg potatoes
  • 400 grams peas
  • 1 can Unox Knaks (400 grams; sausages)
  • 400 grams endive, chopped
  • 3 spoons finely chopped mint
  • 125 ml warm, semi-skimmed milk
  • 2 sprigs of mint

Preparation:

  1. Peel and chop the potatoes.
  2. Boil the potatoes for about 15 minutes.
  3. Boil the pees for 3 minutes, drain and rinse with cold water. Cook the Unox Knaks (sausages) according to the instructions on the package.
  4. Drain the potatoes, but make sure to save the water as you will need it later on. Mash the potatoes and put it back onto the stove. Slowly add the endive, which will slink while you keep stirring.
  5. Add the pees, chopped mint and warm milk, and stir until you get a creamy stamppot. You might need to add some of the boiling water to make it a creamy dish. Season with some pepper.
  6. Serve the stamppot with the Unox Knaks (sausage) and some fresh mint leaves on top.
